Description
This Vonderplanitz Cheese (raw no-rennet, no-salt, full-fat hard cheese) comes from the whole milk of our Jersey-cross cows. The cows have never been vaccinated or injected with anything their entire lives. The cows have access to pasture all the time and are fed high-quality dry hay in the winter. We also offer the cows a small amount of organic ancient grain once a day during milking time. This product is only available to members of the private association and is NOT for sale to the general public.
We use whole milk to make Vonderplanitz Cheese. We allow the milk to sit for 24 hours at an incubation temperature of 80 degrees to set the curds. We then begin draining the whey by hanging the curds in an organic cheesecloth. From there, we put the cheese curds into a press to squeeze out more whey. Finally, we allow to the cheese to age approximately 2 weeks into a hard cheese. This cheese works well with cheese trains or it can be used as a mineral supplement when honey is added. This cheese is sold by the wheel and is approximately 1 pound per wheel (plus or minus a couple ounces). We decided to name it Vonderplanitz Cheese in honor of Aajonus and believe it is a cheese he would have really approved of (no rennet, raw, full fat for optimal cheese pulling and mineral supplementation).
